Creamy Strawberry Ice-Cream - dairy-free

  • ⅓ cup coconut milk
  • 2 cups frozen strawberries
  • 1 cup raw cashew nuts
  • 1 cup ice
  • 1 teaspoon vanilla extract
  • 3 tablespoons honey
  1. Place the coconut milk in first
  2. Followed by the strawberries, then the cashews, then the ice
  3. Follow up with the vanilla and honey.
  4. Blend using a tamper to push down the strawberries and nuts
  5. Blend for about 30 seconds or until smooth and pink and very thick.
  6. Take care not to over blend though.
  7. Serve immediately for soft serve texture or freeze for later.
If you prefer a harder texture ice-cream rather than soft-serve texture, then place in a glass container and freeze after making it. You can then eat it about three or more hours later.
