Honey Soy Chicken Shish Kebobs

These Honey Soy Chicken Shish Kebobs are sticky, sweet, flavoursome, juicy, and everything you want in a grilled chicken kebob recipe – delicious!  I have already made them twice this week.  The beauty of these is that they are so easy and quick to prepare.  I just cut the chicken into bite size pieces and marinate it before placing it on metal skewers and grilling over the BBQ. It is important to ensure the pieces are as consistent as possible in size. After marinating them for a few hours or overnight,  they simply get thrown on the BBQ grill.  Although marinating overnight is ideal,  even just two hours is enough to get in loads of delicious flavour.Honey Soy Chicken Shish Kebobs

 

Yum, yum, yum! Mouth watering juicy flavoursome sticky chicken is hard to beat and the BBQ always brings out the best flavour.  I personally use a Weber BBQ with the lid closed and it cooks the chicken beautifully.  Thigh fillets are definitely the chicken cut of choice for these chicken kebabs.  Of course you could use bamboo skewers, but you would need to soak them in cold water beforehand.  I personally prefer metal skewers as they can be washed and re-used and you don’t need to worry about them burning. Serves: 4 very full skewers
Ingredients
  • Chicken Thigh Fillets x 600 grams (or 6 small ones) - skinless and boneless
  • Peanut Oil x 3 tablespoons
  • Soy Sauce x 3 tablespoons
  • Honey x 4 tablespoons
  • Brown Sugar x 3 teaspoons
  • Crushed ginger x ¼ teaspoon
  • Garlic powder x ½ teaspoon
  • Onion powder x 1 teaspoon
  • Salt and pepper to taste
Instructions
  1. Mix all ingredients (except chicken) including salt to taste in a medium bowl
  2. Mix until well combined
  3. Cut chicken thighs into bite sized pieces (all same size)
  4. Place chicken pieces into marinade, mix well and cover
  5. Place in refrigerator for at least 2 hours or overnight.
  6. Thread chicken onto metal skewers
  7. Place on BBQ grill and grill for a few minutes each side
  8. Slosh more of the marinade over the chicken at the beginning
  9. Cook approximately 15 mins. Time will vary depending upon the heat of your grill, and chicken piece size.
  10. But cook until juices run clear and chicken is cooked through.
Notes
Serving Suggestion: I serve two skewers per person with roasted pumpkin and steamed broccoli rolled in a little butter, or alternatively with a nice greek style salad.
