Home made fast food is fun and hits the sweet spot. This is a favorite home-made fast food pizza. I make this dish when I want a yummy crispy colourful pizza on the table in fifteen minutes with some gooey and good stuff on it. With some pita bread handy, fresh spinach, mixed lettuce and a variety of gold, yellow and red tomatoes in the fridge, it is easy to make happen. This fast vegetarian pizza is my go-to fast food when I have zero time to muck about. Flavor is king and this pizza has zing from the medium taco sauce on its base – great for when you have no time to prep. This is the super fast takeaway substitute version for a convenient quick fix of home made fast food. Medium Old El Paso Taco sauce adds punch and heat on the base to complement and bring out the flavors in the rest of the ingredients. I feel like I’ve truly indulged after eating this pizza. In times gone by where I’ve been on weight loss programs like Weight Watchers, it fits right in – and yes I can have the whole goddamn thing and not feel guilty.
- 1 Wholemeal Pita Bread (medium or large)
- Old El Paso Taco Sauce (medium)
- Combination of mixed cherry tomatoes (gold, orange, red) sliced - full flavoured tomatoes
- Spinach leaves
- Rocket Leaves
- Spanish onion (red or purple onion)
- Tasty Cheese mixed with a touch of Mozarella (go easy)
- (Pita bread bases vary, so quantities used will depend upon the size of the base - no mucking about here, just toss it on)
- Spread medium taco sauce onto pita bread over entire base
- Slice mixed tomatoes and scatter over pita bread liberally
- Slice spanish onion and scatter over pita bread
- Top with grated cheese (about 40 grams - depending on size of pita bread)
- Bake in moderate oven for about 12 minutes or until brown and crispy
- Sprinkle with salt to suit
- Toss over fresh spinach and mixed green leaves
- Season with salt and pepper
- Cut into four slices
- Enjoy!
